Baked Prawn in Tomato Feta Sauce

Serve as a main course with steamed rice or pasta for 4

A dish doesn’t have to be complicated, or take a lot of time, to be good. This recipe is very simple and easy to follow.

Ingredients

  • 1 medium onion
  • 2 cloves garlic
  • 2 tomatoes
  • 1/4 cup finely chopped fresh parsley
  • 500 grams prawns, peeled
  • pinch of salt
  • pinch of pepper
  • 80 grams feta cheese

Steps

  1. Preheat oven to 240 Celcius.
  2. Cut the onion and tomatoes into small pieces. Finely chopped the garlic.
  3. Heat oil in a large pan, oven proof. Add the onions and cook until softened, about 3-4 minutes. Add the garlic and cook until fragrant, about 1 minute.
  4. Add tomatoes and bring to simmer, reduce heat and let simmer for about 10 minutes.
  5. Remove from the heat. Stir in the parsley, prawns, feta cheese, and salt and pepper to taste.
  6. Place pan in oven and bake until the prawn is cooked,
  7. Serve immediately with rice or pasta.
