Corn and Avocado Salad

Serve as salad or entree

This corn and avocado salad is so quick and easy to prepare and is vegan friendly.

Ingredients

  • 1 ripe avocado
  • 100g corn kernels
  • 2 shallots
  • 1/6 cup finely chopped fresh coriander
  • 2 tbs fresh lime juice

Steps

  1. Cut the avocado into small pieces.
  2. Finely chopped the shallots.
  3. Combine the avocado, corn, shallots, and lime juice in a bowl. Serve.
  • It's really a refreshing little dish, perfect for Amuse-bouche or even a pallette cleanser between main dishes.
