This corn and avocado salad is so quick and easy to prepare and is vegan friendly.
Ingredients
- 1 ripe avocado
- 100g corn kernels
- 2 shallots
- 1/6 cup finely chopped fresh coriander
- 2 tbs fresh lime juice
Steps
- Cut the avocado into small pieces.
- Finely chopped the shallots.
- Combine the avocado, corn, shallots, and lime juice in a bowl. Serve.
